Ingredients:
For the Dough:
- 3 1/2 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon sugar
- 1 tablespoon active dry yeast
- 1 1/4 cups warm water (110°F/43°C)
- 3 tablespoons olive oil
For the Filling:
- 1/2 cup Kalamata olives, pitted and chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1/2 cup feta cheese, crumbled
For Topping:
- Olive oil for brushing
- Coarse sea salt for sprinkling
Activate the Yeast
In a small bowl, combine warm water and sugar.
Sprinkle the yeast over the water and let it sit for 5-10 minutes, or until it becomes foamy.
Prepare the Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil.
Mix until the dough comes together.
Knead the Dough
Turn the dough out onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
Prepare the Filling
In a small bowl, mix together olives, sun-dried tomatoes, rosemary, thyme, and feta cheese.
Set aside.
Shape the Fougasse
Preheat your oven to 425°F (220°C). Punch down the risen dough and turn it out onto a floured surface.
Roll it out into a large oval or rectangle.
Transfer the rolled-out dough to a parchment-lined baking sheet.
Add the Filling
Spread the Mediterranean filling evenly over the surface of the dough.
Shape the Fougasse
Use a sharp knife to make several diagonal cuts in the dough, creating a leaf or wheat-like pattern.
Pull the cuts apart slightly to give the fougasse its characteristic shape.
Second Rise
Cover the shaped fougasse with a damp cloth and let it rise for another 20-30 minutes.
Bake
Brush the surface of the fougasse with olive oil and sprinkle with coarse sea salt.
Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
Cool and Serve
Allow the fougasse to cool on a wire rack for a few minutes before slicing.
