Cheesy Roasted Garlic Soup With Sourdough Crumble Recipe


For the Roasted Garlic Soup:

  • 2 heads of garlic
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 tablespoons butter
  • 4 cups chicken or vegetable broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

For the Sourdough Crumble:

  • 2 cups cubed sourdough bread
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste


Roast the Garlic:

  • Preheat the oven to 400°F (200°C).
  • Cut the tops off the garlic heads to expose the cloves.
  • Place the garlic heads on a piece of foil, drizzle with olive oil, and wrap them in the foil.
  • Roast in the oven for about 30-40 minutes or until the garlic cloves are soft and golden. Let them cool.

Prepare the Sourdough Crumble:

  • In a bowl, toss the cubed sourdough with olive oil, garlic powder, dried thyme, salt, and pepper.
  • Spread the seasoned bread cubes on a baking sheet and toast in the oven at 350°F (180°C) for 10-15 minutes or until golden and crispy. Set aside.

Make the Roasted Garlic Soup:

  • In a large pot, melt butter over medium heat. Add chopped onions and sauté until translucent.
  • Squeeze the roasted garlic cloves into the pot, discarding the skins.
  • Stir in the chicken or vegetable broth, and bring the mixture to a simmer. Let it cook for 10-15 minutes.
  • Using an immersion blender or transferring in batches to a regular blender, puree the soup until smooth.
  • Return the pureed soup to the pot and stir in the whole milk and heavy cream. Simmer for an additional 10 minutes.
  • Gradually add the shredded cheddar cheese, stirring until melted and smooth.
  • Season the soup with salt and pepper to taste.


  • Ladle the soup into bowls and top each serving with a handful of sourdough crumble.
